Because a huge Indian meal needs some form of a salad. Why? Who knows. Cause I want it.
In a big skillet, heat a solid dash of olive oil over medium heat and add:
2 or 3 plum tomatoes, diced (scoop out the seedy centers...those make for ooky spinach)
2-10 cloves garlic
Sautee for just a sec or until you can really smell that garlic. Yummers. Then add:
2 pounds raw spinach
Cook everything down over medium heat, wilting the spinach as you go. Covering the pan for a few moments will really expedite this process.
When all the spinach is wilted, dress your hot salad with salt and a dash of lemon juice.
Serve. Done. You should make this all the time.
